This has been a big struggle
for me and hubby. He does not have access to a refrigerator or a microwave so
whatever is packed is how it is eaten. He is really not a picky eater – boiled eggs,
green peas, vienna sausage and hominy are about all that is on his “do not feed
me” list. In all honesty processed foods like Vienna sausage, potted meat,
hotdogs, bologna and spam are on all of our “do not feed me” list. We just don’t
eat that much processed foods, summer sausage is about it for us and that is
rare. The kicker is getting him to try new foods. He is worse than a kid
sometimes. Finally this weekend I got him to try the Belvita bars and wouldn’t
you know it he liked them. I have been putting them in his lunch box for two
months but he wouldn’t try them. GRRRR MEN! LOL what is the old saying - can’t
live with them and can’t live without them!
There have been a lot of
sandwiches lately and he is tired of sandwiches. He informed me that it really
needs to be “finger” foods so he can eat while driving from point A to point B –
great that ruled out soups and salads. Needless to say it has not been pretty
at my house some days. To keep peace, save my sanity and make my life simpler I
went in search of lunch ideas. It was suggested giving him $10 and telling him
to buy his lunch. Well that might work if fast food restaurants were in the
middle of oil fields but about all he sees is pumps and cattle and the small
towns in and around where the oil fields are do not have fast food restaurants.
I mean we are talking towns with only 100 or so in population. It has been hard coming up with ideas that are filling, not loaded with junk and are nutritious.
Here are some things I have
come up with:
Sushi rolls – he loves sushi
Mini meatloaves – that is
what he has today with fruit and raw cauliflower
Quiche
Chicken nuggets
Stuffed mushrooms
Pigs in a blanket
Pot stickers
Egg rolls
And if I go with the pot
sticker and egg roll ideas that will open up a whole new ball game. I can use crescent
rolls and make all sorts of stuff like mini calzones, hot pockets, etc. I went
to www.pillsbury.com and looked at their
appetizers and came up with a bunch of new ideas for lunch. Between the homemade muffins, mini meatloaves,
mini cabbage rolls, raw veggies and nuts and if I toss in a few pot stickers, egg
rolls and quiche I don’t think he will starve.

box? Do you have any tried and approved lunch ideas if so please share them.
How about burritos? You can pretty much wrap anything in a tortilla. There is a particular way to wrap so nothing falls out.
ReplyDeleteI have done some burritos. The only thing is he usually eats while driving and burritos are not really drive friendly LOL. He loves for me to take pizza dough and make beef and cabbage hot pockets. He likes them small, like one or two bites. They are really not hard to make. Next time I make them I will post pictures and the recipe.
