Life Happens and a New Chicken Recipe

Sorry I have been MIA for most of the month but I have been trying to juggle winter weather, household duties and dealing with the fact that my brother is lossing his battle with liver cancer. He will be 61 in a few days if he lives that long. This has been especially trying for me since I live 15 hours away from family and we have had issues in the past. So my advice to everyone say your sorry and I love you even when you don't think you can. You just never know when and if you will ever get to chance to say it again.

Now on to happier thoughts...with all that has been going on I have been recycling recipes like crazy this month but Tuesday I got a chance to try out a new recipe and it was a smashing success.

Bruschetta Chicken (this recipe is from Kraft Foods but I modified it some)

2 cups diced Roma tomatoes (I used 6 large Romas and ran them though the food processor, I have a couple of guys that do not like tomato chunks the orginal recipe calls for 1 can diced tomatoes)
1 package of chicken flavor stove stop stuffing (or do like I did and make your own)
1/2 cup hot water
4 cloves of garlic minced (I used 4 since we LOVE garlic but the recipe only called for 2)
1 - 1 1/2 pounds chicken breast cut into strips or diced (I used thighs and diced them)
1/4 cup fresh basil  (I ran the basil and garlic though the mini processor and it was just perfect - the orginal recipe called for 1 teaspoon dry basil)
1 cup mozzarella cheese (I used a whole 8 ozs - my guys love cheese)
1 cup parmesan cheese (not in the orginial recipe)

Mix stuffing and water and set aside. Dice chicken and place in a 9x13 top with basil and garlic, then add mozzarella cheese. Mix stuffing and parmesan cheese then spread over top of chicken mixture. Cook at 400 degrees for 30-45 minutes or until chicken is done.

This serves 6 people. I split it and had it for two meals. Now I can definitely say this was delicious and it will become one of my freezer meal.
