Chocolate Attack

Over the past year we have been living on a very tight budget. Which means I haven't been buying the little extra stuff like brownie and cookie mixes that you just add an egg and half cup of oil and poof you have brownies/cookies ready for the oven. Today I am working from home because they are stripping and waxing the floors at work; around 2:00 I went on the hunt for something yummy. OK so I was having a chocolate attack and there was nothing. Not even any chocolate Christmas candy; actually there was never any chocolate candy in the house, it seems that all three of my boys prefer the gummy bears, sour gummys, and skittles...(it must be just a girl thing LOL). I am not saying they don't like chocolate they just prefer the sour gummy stuff. So being the cook from scratch girl that I am I pulled out my trusty recipe file and dug out my chocolate-peanut butter chip- walnut brownie recipe and made a double batch. Now these brownies are not for the faint at heart or anyone counting calories/fat grams or any of that other stuff.

Basic Brownie Mix...
2 cups of sugar
1 cup of flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
2 sticks of butter/margarine soften

Shift flour and mix in all of the above ingredients.

Add 2 eggs, a teaspoon of vanilla half cup of chocolate syrup and 8 tablespoons of oil mix until moistened.

Now comes the fun part....

Add a half cup of each of the following in any combination:
peanut butter chips
white chocolate chips
chocolate chips
walnuts
pecans
M&Ms
peanuts
peanut butter

Bake in a 9x13 pan at 350* for about 35-45 minutes or until a knife inserted in the center comes out clean. Cool in pan then cut into squares.

What I really like about this recipe is you can mix up the dry ingredients and store them in an air tight container. If you choose to do this then omit the butter/margarine.

To use dry brownie mix:

Lightly spoon 2 cups of mix in to mixing bowl add:
1 egg
half cup oil
fourth cup chocolate syrup (you can omit the chocolate syrup by just adding an extra egg.)
and any other add ins that you want mix and cook in a 8x8 pan for 30 minutes at 350* or until a knife inserted in the center comes out clean. Cool in pan then cut into squares.

What I usually do is take quart freezer bags and put 2 cups of mix add the chips and nuts then store in the freezer. That way the boys can just add two eggs and ½ cup of oil and bake.
