The Dredges from the Refrigerator - the hazards of once a month paydays


Normally on weekend hubby will grill or I will have prepared something ahead of time, but not this weekend. It was crazy…our weekend was not our own. Saturday lead into Sunday and we didn’t get in bed till LATE or was that early? More like early, slept through breakfast and church. Around lunch time we returned to the land of the living but no one was hungry. By 5:00 though we had decided we wanted something to eat but didn’t want to go out because that would mean getting dressed in something besides pjs and putting on shoes. So I went to the refrigerator and was disappointed NO LEFTOVERS. Horror of Horrors, that means I had to throw something together.

As luck would have it this weekend everything was froze. I scrounged around in the frig which was a challenge seeing as I had not gone grocery shopping because it was just before payday and we were down to the dredges so to speak. So any way I found six shriveled potatoes, a half of an onion, five eggs, half pound of pork sausage, withered mushrooms that still edible, ½ cup of New York sharp cheddar cheese, three slices (well ok so they were broken and mostly crumbles) of hot pepper jack cheese and ½ can of green chilies. Oh let’s not forget the six slices of crushed bread that someone had not put the tie back on and it was stale.

I toasted the remaining six slices of crushed bread and lined it in the bottom of a 9x13 pan. I shredded the potatoes and put half on top of the toast. I then placed half of the cheese (mostly the pepper jack cheese) on top of the potatoes then added the browned sausage, mushrooms, green chilies, and onion. I added the remaining potatoes. Whisked the eggs together and poured over the potatoes then added the remaining cheese. Bake for 45-to an hour at 350 degrees. (Sorry I really don’t remember how long it baked. The timer was set for 30 minutes but it was not done so hubby set the timer again.)

I served it with fresh fruit and salsa. Not sure what to call it but again no left overs LOL, I think I leave with a bunch of human garbage disposables. LOL
