Gosh Darn-it You mean I Have to Cook Dinner



So last night was another one of those “gosh darn it I have to cook dinner” nights. Hubby and I both are now officially on summer hours at work. Since we get home an hour earlier I don’t start cooking right away and then it sneaks up on me. I have been trying to do modified plan of once a month cooking and since the weather has been really nice we grill a lot. Just like this weekend we grilled enough for four meals. I have two meals of chicken and one meal of shrimp. Last night was shrimp night.

Have you ever had Italian macaroni and cheese? Neither have I and to tell the true I have never seen or heard of a recipe, I just made it up as I went last night. I thought it was too cheesy but the guys loved it. I dug through the refrigerator and found about ¼ cup of Italian Four-cheese blend shredded cheese, about ¼ cup of Parmesan cheese and two slices of Provolone cheese. Oh and ½ of a cream cheese package. I melted ¼ cup of butter in the pan then whisked in ½ cup of flour and a cup of milk until smooth then I added the cheese and seasonings. I was out of homemade Italian seasoning so I kind of threw some together. I used a couple of dashes each of basil, oregano, parsley, garlic and cumin.

I whisked it all together until it was well blended and smooth. I stirred in noodles (I cooked rigatoni noodles) shrimp and a can of asparagus. I wish I had heated the asparagus it wasn’t hot enough for me. There were no left overs so I guess that means it was a success.
