Barley the Heart Grain

Forgive me please for missing yesterday. I left my research information at home and then when I got home I totally forgot to type it up and post it. So today I will post about Barley.

So there were no can openers, no freezer, no microwaves and no drive-thru restaurants during bible times. Yet the people were probably healthier than we are today. Why? Well their food was fresh and in its most natural state.

Barley is among the earliest known and most nourishing grains ever. It was the staple food of the masses. The fact that barley is mention so often in the bible shows that the people consumed large quantities of the grain.

Even today barley is still an important food throughout the Middle East. Between the barley and the low fast high roughage intake this may account for the generally low rate of heart disease in that part of the world. Barley is know as “medicine of the heart” That’s because it is full of beta glucans which is a type of fiber that can lower cholesterol.

Barley is also good for people who suffer chronic constipation. Doctors have had patients substitute barley flour for wheat flour in making bread and most of the patients that consumed at least three serving a day were cured without any further medical treatment. As soon as they stopped using barley flour and went back to wheat they became constipated again.

The hull-less waxy variety of barley contains the highest amount of beta glucans. So look for “un-pearled” when you shop for barley. You may have to request it at a health food or bulk food store. You are most likely to find only pearled in your average supermarket.
