Chicken Tater Tot Casserole

This is a combination of recipes. The original recipe was "bland" according to my husband so he helped me tweak it. Last night's dinner was the final product and he declared it a success. So here is another kitchen tested and husband approved recipe. Hope you enjoy it.



Chicken Tater Tot Casserole
1 32oz bag of frozen tater tots
6 slices of cooked bacon – crisp
4 boneless –skinless chicken breast diced
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
1 teaspoon poultry seasoning
1 large onion diced
1 teaspoon salt
1 can cream of chicken soup plus one can of milk

Mix diced onion, diced chicken, pepper jack cheese, salt, poultry seasoning and cream of chicken soup together in bowl and set aside. Layer half of frozen tater tots in the bottom of crockpot top with 3 slices of crumbled bacon and ½ of shredded cheddar cheese. Spread chicken mixture over tater tots. Top with remaining 3 slices of crumbled bacon and remaining ½ of cheddar cheese. Layer remaining bag of tater tots on top, pour can of milk over top.  Cover and cook on low for 4-5 hours.

As you know we have moved and in that move my camera decided to play hide and seek. I am still seeking but one I find it I will start posting pictures with these recipes.

This also freezes well. It will go into my OAMC recipe box. I will mix the chicken, pepper jack cheese, soup, onion, salt and seasoning together and freeze.  Since I cook my bacon in the microwave I will cook it the day that I plan on have this for dinner.
